Bring freshly drawn cold water to a rolling boil. Use 1 teasp. of loose-leaf tea for each cup. Pour water into teapot and let steep according to chart below. For Black and Green tea, remove the tea leaves and enjoy the tea. Remember to vary the time according to taste, not color. Over steeping does not contribute to flavor, only bitterness.

Black
Steep for 2-5 Minutes
Use Water at Rolling Boil (210° F)

Oolong
Steep for 1-3 Minutes
Use Lightly Boiling Water (165-190° F)
(traditionally, Oolong leaves are used 3 times )

Green
Steep for 1-4 Minutes
Use Steaming Water (150-180° F)

White
Steep for 1-4 Minutes
Use Steaming Water (150-180° F) 

Herbal & Rooibos
Steep for 5-7 Minutes

Tea Blooms
Blooming tea, also referred to as Blossom or Flower tea is a hand-crafted tea, in which edible flowers are tied in a ball of high quality tea leaves. When brewed the blooming tea ball will slowly open, giving the appearance of a blossoming flower.

Tea Bloom Preparation:
Place one Flowering Tea Bloom in a durable glass teapot (Remove strainer). Bring water to a boil and pour over tea. Behold the magic of the unfolding tea leaves. Allow to steep 2-3 minutes, to desired strength. After enjoying the first pot, a Flowering Tea may be re-steeped 2-3 more times.
